Terroir: Gravelly clay soil on schist
Vinification: Respect for the harvest, slow and meticulous pressing. Barreling for immediate fermentation in oak casks with racking at key moments. Aging takes place for 12 months on fine lees in barrels.
Tasting: A straw-yellow color, a powerful and complex nose of quince. The attack on the palate is round and fine, thanks to a slight acidity that energizes the finish.
Gourmet pairings: A perfect match for grilled fish, pan-seared scallops with a creamy Coteaux du Layon reduction sauce, white meats, and pressed cheeses
Serving temperature: 10-12°C
Aging potential: 2 years
